Pumpkin Basque Cheesecake

A crustless pumpkin basque cheesecake with a deeply caramelized burnt top and a creamy, custardy center — no water bath, no crust, no cracks to hide. One bowl, one pan, and a hot oven do all the work.

Equipment

  • 9-inch springform pan

Ingredients

  • 32 oz full-fat cream cheese 4 blocks, softened to room temperature
  • 1 cup granulated sugar 200 g
  • 1 cup pumpkin puree 240 g, not pumpkin pie filling
  • 4 large eggs room temperature
  • 1 cup heavy cream 240 ml
  • 1/4 cup all-purpose flour 30 g
  • 1 tablespoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon fine salt

Instructions

  • Heat the oven to 425°F (220°C). Line a 9-inch springform pan with two crumpled sheets of parchment paper, pleating them up the sides so the paper rises about 2 inches above the rim.
  • Beat the cream cheese and sugar in a large bowl on medium speed until completely smooth and creamy, about 2 minutes, scraping down the bowl halfway through.
  • Beat in the pumpkin puree, vanilla, pumpkin pie spice, cinnamon, and salt until smooth.
  • Add the eggs one at a time, beating just until each disappears. Do not overbeat — extra air causes cracking and a puffy, sunken center.
  • Sift in the flour and beat on low just until no dry streaks remain.
  • Pour in the heavy cream and mix on low until the batter is silky and pourable.
  • Pour the batter into the prepared pan and smooth the top. Tap the pan firmly on the counter twice to pop any large air bubbles.
  • Bake at 425°F (220°C) for 45–55 minutes, until the top is deeply browned — dark mahogany in spots — and the center still jiggles like set gelatin when you shake the pan gently. A burnt-looking top is correct; that is the Basque signature.
  • Cool in the pan on a rack for 1 hour. The cake will sink and wrinkle as it cools — that is normal and expected.
  • Chill uncovered (or loosely covered) in the refrigerator for at least 4 hours, preferably overnight, before slicing with a hot, dry knife.

Notes

Room-temperature cream cheese and eggs are non-negotiable: cold cream cheese leaves lumps that no amount of beating fixes.
Use pumpkin puree, not pumpkin pie filling — pie filling is pre-sweetened and pre-spiced and will throw off the texture and sweetness.
Do not fear the burn: if the top is only golden, it is underbaked for a Basque. Dark, even near-black spots are flavor, not a mistake.
The center should jiggle when it leaves the oven. It sets fully as it cools and chills — baking until firm gives a dry, dense cake.
Chill overnight for the cleanest slices and the silkiest texture. Serve at cool room temperature, not ice-cold, for the best flavor.
Cool 1 hour at room temperature, then chill at least 4 hours (overnight is best).
