Chocolate Base
- 16 ounces semi-sweet chocolate chips (450 g)
- 1 tablespoon coconut oil or refined neutral oil
Toppings
- 1 large Granny Smith apple diced small (about 1 cup / 150 g)
- 1 tablespoon lemon juice for the anti-browning soak
- 1 cup mini pretzel twists (60 g), roughly broken
- 1/3 cup thick caramel sauce (80 ml), plus more for drizzling
- 1 teaspoon flaky sea salt like Maldon
Line a 9 x 13-inch (23 x 33-cm) baking sheet with parchment paper, leaving a little overhang for lifting. Set it next to your stove — you want to pour the chocolate while it's glossy.
Prep the apples: dice the Granny Smith into small pieces (about 1/2-inch / 1-cm cubes — small pieces stick to the bark better than big chunks). Toss immediately in a bowl with the lemon juice and 1/2 cup cold water. Let them soak 2 minutes, then drain and PAT THOROUGHLY DRY with paper towels. This is the most important step — wet apples make the chocolate seize and slide.
Melt the chocolate: combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second bursts, stirring between each, until smooth and glossy (about 90 seconds total). Alternatively, melt in a heatproof bowl over simmering water.
Spread the base: pour the melted chocolate onto the prepared baking sheet and spread into an even rectangle about 1/4-inch (6-mm) thick. Work quickly — you want the toppings on while the surface is still wet.
Load the toppings: scatter the dried apple pieces evenly over the chocolate, then the broken pretzels. Warm the caramel sauce for 15–20 seconds so it drizzles easily, then zigzag it generously over everything. Finish with the flaky sea salt.
Chill to set: refrigerate for at least 1 hour, until the chocolate is completely firm and snaps when you tap it.
Break into bark: lift the slab out using the parchment overhang and break it into 12 rustic pieces with your hands (or cut with a large knife). Serve cold or at room temperature — the chocolate firms right back up.
Pat the apples bone dry: any surface moisture will make the chocolate seize and the pieces slide right off the bark. Towel-dry twice — this single step decides success or failure.
Lemon-water soak stops browning: the 2-minute soak keeps the apple pieces bright and fresh-looking. Just don't skip draining and drying afterward.
Keep pieces small: dice the apple and break the pretzels small so every bite gets a bit of everything and nothing topples off the slab.
Drizzle caramel while the chocolate is wet: a slightly warm, still-wet chocolate surface grabs the caramel and pretzels so they lock in as it sets.
Storage: keeps in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 1 month. Layer pieces between parchment so they don't stick.
